Tips for Your Cart's Freezer
During the Hot Months
1.  Plug in the freezer as soon as you get it to make sure it works properly before your first catering job.

2.  At our store, we never plugged in the unit before we took it to a job. We just loaded it up and went. Then we plugged it in when
we got to our job. It cools down very fast.

3.  If you have 30 minutes to an hour to travel to your catering job, and/or it's an outside job in hot weather, put the tubs of ice
cream in the freezer upside down (you will have to remove the baskets for this). Then turn them right side up and put them in the
baskets when you get there, but leave the ones below upside down. This will give you a better consistency on the ice cream.

4.  In very warm weather, we always filled the bottom with tubs even if we know we are not going to need them because they act
like blocks of ice. That helps keep things cooler in warm weather.

5.  Also, make sure the ice cream is coming from a deep freezer (-15 to -20F), when you are going out in very warm weather. If you
notice the ice cream is too hard, take it out of the deep freezer a little earlier next time and let it temper before you load it. If it is still
to hard when you get to your job, don't plug in the freezer right away.

6.  If you notice the top of the ice cream getting soft, it is normally the top two inches due to warm wind hitting the ice cream when
you open the sliding glass lids. Once you get down a few inches, the ice cream should be fine, even in very warm weather.

7.  If you notice sun hitting the glass, put something over it or shift the umbrella to shade the ice cream if you notice any melting.
